The practical answer
ACC deserves a first look if you qualify for its in-district price and want an associate degree. For shorter training, compare ACC’s one-year certificate with Escoffier’s Austin diploma. Escoffier deserves a look if its 30-academic-week program and available evening session suit your needs and you can justify the higher school charges. Neither is a universal “best school.”
These are different awards: ACC’s 60-credit AAS and Escoffier’s 44-quarter-credit diploma. Quarter credits and semester credits should not be compared one for one.
What changes when you change residency?
Start with charges we can actually trace. ACC’s figures below include tuition and general per-credit fees. Escoffier’s diploma figure includes tuition, the required uniform and toolkit. Neither is a complete attendance budget.
Escoffier’s listed charges are $17,563 higher in this scenario, before the remaining expenses below.
Your address alone does not establish tuition residency. Have the college confirm both state residency and taxing-district status.
| Program / residency | Traceable charges | Calculation |
|---|---|---|
| ACC AAS · Texas in district | $5,100 | 60 × $85 |
| ACC AAS · Texas outside district | $17,160 | 60 × $286 |
| ACC AAS · out of state, in district | $13,080 | 60 × $218 |
| ACC AAS · out of state, outside district | $25,140 | 60 × $419 |
| Escoffier Austin diploma | $22,663 | $22,088 tuition + $575 required kit/uniform |

What still needs to go in the budget?
ACC: lab charges, books, tools and uniforms. Its department also publishes a $6,616.64 in-district program estimate without an itemized or dated basis. Treat that as a separate reference to resolve—not an extra fee to add to $5,100. Department cost guidance.
Escoffier: books, living costs and travel. Its advertised $22,913 total includes a $250 optional technology charge; our $22,663 scenario removes that optional laptop. Your actual enrollment agreement governs.
Both: commuting, housing, food, childcare if applicable, and any income lost while attending. A two-year degree can have lower tuition but more months of living costs. Use the full-cost calculator with your own numbers.
Can you keep working?
ACC: check the whole sequence
The full-time AAS map spans six terms over two years. Fall 2026 includes evening Basic Food Preparation, but Intermediate Food Preparation lists a daytime section. One evening course does not prove that the whole degree fits a day job.
Escoffier: confirm the assigned session
The supplement lists weekday lab sessions, including 6–11 p.m.; availability depends on enrollment. Some blocks require a Saturday. The diploma is 30 academic weeks, which is not a promise of 30 calendar weeks.
Confirm every required block and externship shift before changing your work hours.
Who arranges the practical placement?
ACC requires a 336-hour final-semester internship. It can be paid or unpaid, and students contact employers and secure the placement. Escoffier’s diploma includes an industry externship; its school documents do not establish the pay or shifts of your particular placement. Classroom evening availability does not settle either school’s placement schedule.

Which route should be on your shortlist?
- Budget first, in-district, want a degree: investigate ACC’s AAS and the fees outside its base rate.
- Want a shorter diploma: investigate Escoffier’s calendar, session assignment and externship against the cost of finishing.
- Need an evening-only program: neither a marketing label nor one evening class is enough. Get a complete attendance plan.
- Already an experienced cook: identify the specific skill or credential you lack before purchasing another full program.
Compare shorter routes with shorter routes, and degrees with degrees
| Program | Length | Traceable school charges |
|---|---|---|
| ACC Advanced Culinarian certificate | 36–38 semester credits; 3 terms, about 1 year | $3,060–$3,230 tuition + general fees (36–38 × $85) |
| Escoffier Austin diploma | 44 quarter credits; 30 academic weeks | $22,663 tuition + kit/uniform |
| ACC Culinary Arts AAS | 60 semester credits; 6 terms, about 2 years | $5,100 tuition + general fees |
| Escoffier Austin AAS | 90 quarter credits; 60 academic weeks | $40,285 tuition + kit/uniform/course packs |

These subtotals still exclude books, living costs and the additional costs described above.
