What should you buy before culinary school?

A practical equipment checklist: what to confirm, what schools bundle, and what can wait.

Get the exact school supply list before buying a knife set, uniform or pastry kit. Some schools bundle these into program charges; others require a specific kit or embroidered uniform. Buying early can mean paying twice.

What do actual schools include?

ICE New York: the published institutional program charges include applicable uniforms, books, knives and tools, along with ingredients. Read your program agreement before buying a separate kit. Official charge inclusions.

Escoffier Austin: the diploma supplement separately lists a $225 uniform and $350 toolkit; a $250 laptop is optional. These are school charges, not a recommendation to purchase another kit from a retailer. Official Austin supplement.

Central Piedmont pastry: the program specifies its own toolkit, school uniforms, and an at-least-11-pound digital scale. Embroidered uniforms need at least four weeks’ lead time. Check whether each smaller tool is in the kit before purchasing it separately. Official supply and uniform list.

A-B Tech: the program estimates tools at $430 and uniforms at $345, in addition to books and consumable supplies. Those numbers help build a budget; they do not substitute for the current shopping list. Official program cost estimate.

A sharp knife is only one part of being ready

Our founder emphasizes sharp knives and clean kitchens because both affect everyday work. Turn that advice into questions for a program: who teaches and checks knife care, how much cleaning do students perform, and is station organization assessed alongside the finished dish?

CIA’s published culinary curriculum, for example, explicitly includes students cleaning and sanitizing laboratory areas and equipment. Those duties are part of practical training. CIA curriculum.

Before ordering, check these five things

  1. My exact campus, credential and start term are on the list.
  2. I know which items my program charges already include.
  3. I have the required specifications, quantities and uniform lead times.
  4. I have added books, consumables and replacement needs to my budget.
  5. I know what must be ready for the first lab and what can wait.
